Winemaking

Harvested at optimal ripeness to retain its vibrant acidity, this Sauvignon Blanc is cool-fermented in stainless steel to preserve its fresh, fruit-driven profile. Minimal intervention allows the natural purity of the fruit to shine, delivering a crisp and refreshing expression of King Valley terroir. A portion of the wine is barrel-fermented, adding texture, subtle spice, and enhanced complexity.

The Vineyard

This single-vineyard Sauvignon Blanc is grown in an elevated site in the King Valley, where the cool-climate, easterly aspect, and volcanic red loam soils create the perfect environment for slow, even ripening. The vineyard’s very old vines contribute depth and intensity, producing a wine with exceptional character and complexity.

Tasting Notes

Intensely aromatic, the nose bursts with zesty citrus, passionfruit, and fresh-cut grass, layered with delicate floral and mineral notes. Crisp and refreshing, with lively flavors of lime, green apple, and tropical fruits, balanced by vibrant acidity and a subtle minerality. The palate is clean and expressive, leading to a long, refreshing finish.

Food Pairing

A versatile and food-friendly wine, this Sauvignon Blanc pairs beautifully with fresh seafood, goat cheese, light salads, and zesty Asian dishes. Its bright acidity also makes it a fantastic match for grilled vegetables and herb-infused dishes.
